Yorkshire pudding

(serves 4 people)
3 oz plain flour (75 g)
1 egg
3fl. oz milk (75 ml)
2 fl. oz water (50 ml)
Salt and freshly-milled pepper
2 tablespoons beef dripping (for the roasting-tin)

Pre-heat the oven to gas mark 7, 425″ F (220°C)

For the suet crust pastry:
12 oz self-raising flour (350 g)
6 oz shredded suet (175g)
Salt, pepper and cold water
For the filling:
1 lb chuck steak (450 g)
½ lb ox kidney (225g)
1 medium onion, sliced
2 level tablespoons well-seasoned flour
